Pecan Nut Banana Muffins
Makes 12 muffins
2 ½ cups / 300g pecan nuts
2tsp baking powder
½ tsp baking soda
1 tsp cinnamon
1 large banana
2tbsp light olive oil or melted coconut butter
1-2tbsp honey (optional)
Place the pecan nuts in a grinder or blender and process to form a fine meal. Place in a bowl with the other dry ingredients
Place the eggs, banana, oil (and honey if using) in a blender and process until smooth.
Pour in to the bowl and mix all the ingredients to make a sloppy, lumpy batter.
Spoon into muffin cases in a muffin tray.
Bake at 180°C, gas mark 4 for 30 minutes. Allow to cool for 5 minutes before turning out.
Replace banana with a dried fruit of your choice (e.g. raisins, dried cranberries) for an alternative recipe.
